A Georgian variety of white grape Kisi belongs to the group
of local Kakhetian varieties. Produces a relatively small
amount of grapes. The wine-making process involves pressing
the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri (Amphora-like vessel that is buried in the ground). Fermentation process is done inside the Qvevri. After malolactic fermentation is done, we seal Qvevries and wine is going through process of aging for another 4-6 month. Fermentation with skin rachis and seeds gives wine straw color.
Traditional Georgian method of making wine in Qvevries as Qvevri Wine is an intangible cultural heritage recognized by UNESCO.
