Wine is produced from Saperavi grape cultivated at the
Akhoebi micro zone (PDO). The grapes are hand
harvested from vines aging between 15 and 45 years.
The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri (Amphora-like vessel that is buried in the ground). Fermentation process is done inside the Qvevri. After malolactic fermentation is done, we seal Qvevries and wine is going through process of aging for another 6-8 month. Wine is dark ruby color
